For moms, one of the hardest things in regard to meal planning during Lent is trying to figure out what kind of sandwiches to send to school with the kids, or just for lunch at home. 

 

Try different kinds of breads, pitas, bagels, toasted English muffins, tortillas and such to make it different.  Salt and pepper thoroughly on veggie sandwiches to enhance more taste.  Here are some suggestions besides the ol' P.B.& J. that  might spark some new and alternate ideas for others:

 

LENTEN SANDWICH-FILLING IDEAS

Mashed avocado, salt & pepper

Mashed avocado, lettuce/sprouts, tomato, red onion

Mashed avocado, salsa, small shrimp, sprouts/coleslaw

Soy-mayo shrimp salad, lettuce, tomato

Soy-mayo, red onion, tomato & sprouts

Mashed banana & peanut butter

Grilled mashed banana & peanut butter

Peanut butter & peeled-tart apple slices

Peanut butter, thinly-sliced celery & raisins

Mashed banana & chopped dates

Mashed banana, sesame seeds & honey

Tahini-peanut butter-honey mixed & mashed banana

Chopped falafel, hummus & tomato

Sliced falafel, grated carrot, sesame seeds & raisins

Black bean dip, tomato & mashed avocado

Black bean dip, crushed tortilla chips, tomato & lettuce

Bean dip, crushed tortilla chips, salsa & lettuce

Chopped olives, roasted red pepper, tomato & red onion

Broiled/fried, sliced eggplant, lettuce, red onion & spaghetti sauce

Broiled, sliced vegetables & horseradish aioli

French fries, ketchup, mustard, tomato, red onion, lettuce

Arugula, butter lettuce, sliced radishes & orange vinaigrette

Tapenade, soy-mayo, fresh spinach & tomato

Spanikopita (spinach-phyllo pie) with rice instead of cheese

 

and, finally,  6 year-old, Christiana Karcher's favorite!

 

Taramosalata - fish roe salad

In electric blender, mix:

3 slices French bread, crusts removed and

5 oz. tarama (fish roe)

Add 1 c.olive oil slowly, blending at medium speed.

Add juice of 1 1/2 lemons and 2 TBsp vinegar. Blend on high.

Add 1-2 TBsp water if necessary.  Serve on crusty or hearty bread.
